Bergamot is a member of the citrus family, the rind of which contains an essential oil used in confection & perfumery. It is the ingredient that gives Earl Grey tea it's distinctive aroma.

When cooked to just the right degree, the sponge exterior encases a delicious perfumed molten chocolate centre.

This dish is ideally made using a 5cm diameter metal ring mould.


Ingredients

180g Dark Chocolate
200g Butter
100g Flour
70g Ground Macadamias
160g Sugar
8 Egg Yolks
4 Egg Whites
A few drops of Bergamot Essential Oil to taste


Method

Melt the Chocolate & Butter together in a bowl set over simmering water.

In a separate bowl, whisk the yolks, whites & sugar together until white & fluffy.

Fold the egg mixture into the chocolate & butter.

Sieve & fold in the flour & ground macadamias.

Stir in a few drops of the essential oil to taste.

Pipe or spoon the mixture to half-fill buttered & floured ring moulds on a parchment lined baking tray.

Bake in a pre heated oven at 210°C for 6-7 minutes, carefully place the rings on individually.
